Cook, son of a farmer, in 1994 he began his training as a cook in Aranjuez. He works in restaurants like Lhardy or Lur Maitea. In 2000 he moved to Elche where he created the Gastrobotanica concept, introducing hitherto unknown vegetable varieties in the kitchen. Since 2003 he has been working with great chefs. In 2007 he opened his restaurant. In 2011 he won his first Michelin Star. Until now, he is the Chef os his restaurant in Madrid.
